Holiday Comfort Food Reader Recipes: Arroz Con Leche

Arroz con leche

After we called for comfort food recipes to cook during the holidays, lots of you sent a whole mess of deliciousness our way! So let’s get moving or, um, cuddle up and get stationary with our first up, from reader Susan Ramirez.

How to make this insanely easy recipe, after the jump…

 

You Need:

  • 1 cup of rice
  • 2-3 sticks of cinnamon
  • 3-4 cups of milk (you might need more depending how creamy you like it)
  • 1 cup of sugar
  • small pot of water

  1. First, fill the pot halfway with water, and add the cinnamon sticks to it. Bring water to a boil.
  2. When the water is boiling, add the rice; let the rice cook. The water should slowly start to evaporate, and you will be adding the milk soon.
  3. Once you have tasted the rice and determined that it’s soft and ready to eat, add the 2-3 cups of milk.
  4. Stir the rice with milk, add the cup of sugar, and taste to make sure that it has enough (or if it has too much, just add more milk). Let it sit on the stove for 2 minutes, just so it can thicken up a bit.
  5. Pour in a bowl and get ready to eat. My grandma likes to add a little bit of cinnamon powder on top with some raisins, which is perfect for a really cold night. What’s so awesome about this dish is you can refrigerate it and eat it cold as rice pudding for a snack the next day.

I am getting off the couch right now to make.  Frisky, please post more recipes that include things I already have! This is awesome. I am assuming I can just dump a few tsp of cinnamon instead of cinnamon sticks?

You gotta be careful when serving that to others, though. Some people hate rice pudding. I like cardamon in mine, too.

My mom makes something similar, except she uses evaporated milk.  My gramma likes to put vanilla soymilk in hers. smile

You can make a delicious vegan version with coconut milk instead of cow’s, or three-quarters coconut one quarter cow’s for non-vegans, and it’s delicious too.

@Erin- that’s how I read that at first too, I think they DO have that and want MORE recipes comprised of ingredients they already have on hand, like this one.

This makes for up to 2-3 people!
2 cups makes for 4-5 people, I have a big family so this is great because you just tweak the sugar amounts, and add a little more milk etc.

Hi Susan, I used your recipe to make a dish for Thanksgiving dessert and it went over really well.  I actually used brown rice to make it slightly healthier.  Thanks for the idea.
