While poking around online yesterday, I came across this recipe for a single serving of chocolate cake (the photo at left is merely my serving suggestion). Now, being a single gal who likes to bake, I get a little sad from time to time when I make a cake or a pie and have no possible way of eating it all myself. That’s why I hope this recipe isn’t crap. The cake takes just five minutes to make and doesn’t involve mixers, cake pans, or any of the other required kitchen accessories you might not own if you haven’t had a wedding registry. I’m going to make myself a mini cake and report back on how it looks and what it tastes like, but if any of you try the recipe, let me know whether the mini cake is a success! I have eaten a whole cake and even a pan of banana pudding all by myself because I’ll eat it for breakfast, lunch and snack! I want to try this, but I fear that I’ll want seconds, then what? Also, this reminds me of the cakes you make in the Easy Bake Oven, but I hope it’s much more tasty.

Making a cake for 1 is a little depressing, but that won’t stop me. I’ll just have an extra cocktail with it and pretend that should numb any feelings of loneliness.
