Megan: Pasta With Vodka Sauce
Check out this recipe in full (with more photos!) on Megan's blog.
Ingredients
1 pound uncooked rotini pasta
3 or 4 cloves garlic, minced
1 (28 ounce) can diced tomatoes
1/4 medium onion (white or yellow)
3/4 teaspoon salt
2 tablespoons vodka
1/2 cup heavy whipping cream
1 package of Jimmy Dean's Hot Pork Sausage (This stuff is awesome. Really ramps up the flavor in sausage dishes)
To Prepare
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. In large skillet, cook pork, breaking up the meat, until brown (You may need a touch of olive oil if it sticks). Add garlic and onion and cook, stirring until garlic is golden brown.
3. Add tomatoes with a little of the juice and salt; bring to boil. Reduce heat and simmer 15 minutes. Sauce should thicken.
4. Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute (or keep separate for best leftovers). Stir in fresh parsley and serve! Facebook Like
