I am shamelessly addicted to homemade veggie burgers for 3 reasons:
1. They're super easy to make. Some recipes are a little time-consuming, but they rarely require any technique more complicated than "mash all these things together in a bowl," which is fun.
2. They're mega healthy. Veggie burgers can be made with anything from beans to quinoa to rice to lentils to cauliflower (or any combination of these things). They're basically piles of veggies formed into patties. So good for you.
3. The biggest reason of all? They are DELICIOUS. Seriously, it's amazing how much flavor you can pack into these things. Served with melted cheese, a simple flavored mayo, and sweet potato fries, I could happily eat them every day of the week (and sometimes I do!).
