Earlier this week, our marketing coordinator, knowing my favorite pastime is cooking/eating, sent me an excited email about the snack she invented one particularly hungry afternoon. “So, in the past week strawberries have been amazing,” she wrote. “I decided to put a smear of fresh goat cheese on a Nilla Wafer and topped it with half a strawberry — it was AMAZING. Like a tiny cheese cake without any of the work!” This got me thinking that A) I need to buy some strawberries at the farmer’s market this weekend (my fridge is always stocked with goat cheese) and B) this would be a great introduction for my first request for reader submissions for our “Random Single Gal Recipes” feature.
